Ingredients

  • 1200 g Fresh shrimp
  • 23 slices Galangal, sliced
  • 32 stalks Lemongrass, bruised
  • 45 leaves Kaffir lime leaves, torn
  • 5100 g Straw mushrooms
  • 65-10 pieces Thai bird chilies
  • 72 tbsp Fish sauce
  • 83 tbsp Lime juice
  • 91 tbsp Roasted chili paste
  • 10500 ml Stock

Instructions

    Boil stock with galangal, lemongrass, and kaffir lime leaves

    Add mushrooms and cook until done

    Add shrimp and cook until just done (2-3 minutes)

    Remove from heat, add fish sauce, lime juice, and chili paste

    Add crushed chilies and stir

    Serve garnished with cilantro
